Banana Nut Muffins and Bread

3c Flour
1 1/3c White Sugar
3tsp Baking powder
1/2tsp Baking soda
1/2 tsp Salt
1 1/2 c Rolled Oats
2c Mashed Banana
2/3c milk
1/2c vegetable oil
2tsp vanilla
4 eggs
1/2c chopped walnuts (optional)

Preheat oven to 350.  Spray loaf pan and muffin pan with non-stick spray or butter and flour pan.
Combine first 6 ingredents (all dry ing)  in large mixing bowl.  In a seperate bowl mash 6-8 ripe bananas (you can usualy find bananas on clearance)  add the rest of the wet ingredents to the mashed bananas.  Once incorporated add the wet ingreadints to the dry and add walnuts and fold together until combined.  Pour half the batter into the loaf pan then the other half into the muffin cups.  Bake Muffins for 25-30 min and loaf for a total of 50-55 min.  When done let sit in the pan for about 15min then take out of pan and cool completely on wire rack.  Can be wrapped in plastic wrap if going to use immedately or placed in freezer bags and frozen for future use.
